Healthy Eats: Simple Low Cal Egg Bites

As you know I’m own my way down the aisle to the altar. I have exactly seven more months until it’s time to tie the knot. Which means I have seven months to carefully watch exactly what I put in my mouth. I want to loose weight to look my best on my wedding day (which I look fine now, but you know how it goes), but I honestly want to loose weight for me because my body deserves to be in the best condition. Sometimes action comes when you’re fed up and being sick and tired. Honestly that time is NOW! I just happen to have a big milestone in my life ahead of me where a little slimming down would be nice. My goal is to be conscious of what I prepare and what I eat along with not stressing myself out about it.

I’ve been seeing all over social media that people are making egg muffins for their breakfast. I decided to do the same except I don’t have muffin pan. My goal was to buy one just for this purpose, but I kept forgetting to grab one at the store. Instead of using a muffin pan, I used my trusty casserole dish. Needless to say, it turned out great! I didn’t have the cute little round muffins, but I was able to have little cute fluffy egg squares that were easy to pop in my mouth.

True Story, when I had to make two versions of this before I actually got it right. The first one I burnt it by forgetting it was in the oven. I NEVER forget food in the oven, but I was also distracted and forgot that it was in there. Lesson Learned, pay attention!

To prepare my egg bites, I used the following ingredients

  1. 2 Green Bell Peppers (they were small)

  2. Honey Roasted Turkey

  3. Cheddar Cheese

  4. 8 Large Eggs

I chopped everything up and poured my eggs on top. I did season with Onion and Garlic Powder (which was good, but probably not a good idea for morning breakfast at work). I baked in the oven on 350 until it was done. I didn’t time it , but I did make a point to watch it to keep a check on it.

Once it was done, I let it cool and I cut it into 1 inch squares. Then I put them in my Rubbermaid Takeaway containers. I reheat them for 1 minute in the morning before work and ate them with my coffee. It was lite and filling at the same time. I had about four little squares. Some mornings it was just three squares. I’m sure it equaled out to about two servings of eggs per day. I never got a picture of the finished product, but I will be making this again tomorrow morning, I will share a pic on my Instagram Account. Make sure you’re following me!
